Hi Jake,
All photos you put on iLovePhotos are private between you and the people you specifically share with.
When sharing with the desktop software, if you click on the "SHARE" button in the bottom bar, you'll see a screen where you can share the selected photos with specific people and email addresses.
Alternatively, you can choose to auto-share photos with the people in each photo by clicking the auto-share checkbox on the new tag popup window.

I have seen mention of Privacy settings but cannot find the option in the prefs or on the site. Have they been rolled out yet?
